Mediterranean Quinoa Salad

In an effort to branch out on my weekday lunches, I decided to try out this Mediterranean Quinoa Salad inspired by one of my favorite recipe blogs: Skinnytaste (check out the original recipe here).  I changed it up a little bit due to personal taste, but Skinnytaste gave me a great foundation to start with.  I love the flavor combo
and the fact this dish is packed with protein (a great thing for my fellow vegetarians out there!  Vegan?  Omit the feta cheese and you are good to go!)  So whether you’re thinking lunch or a refreshing side for your next summer BBQ, this salad is a great option


  • 1 cup uncooked quinoa
  • 2 cups water
  • 1/4 cup red onion -diced  (I used a left over spanish onion from the night before, either work!)
  • 1/2 – 3/4 lemon, squeezed
  • 1/4 cup (about 10) kalamata olives, pitted and sliced
  • 1 cup red pepper – diced
  • 2 tbsp extra virgin olive oil
  • 1 1/2 cups cucumber – diced 
  • 1/2 cup grape tomatoes, halved
  • 1/3 cup crumbled feta
  • salt and fresh pepper, to taste (not pictured)


  • Rinse quinoa thoroughly in mesh strainer (about 2 min)

  • In a medium-sized pot, add water, quinoa and a pinch of salt.  Bring to boil.  Cover, reduce heat and let simmer for 15 min (set your timer!)
  • Remove pot from stove, keeping the pot covered, and let the quinoa sit another 5 minutes (water should be absorbed and quinoa should be light and fluffy)
  • Remove quinoa from pot and add to a mixing bowl.  Let cool (about 20 min).


  • While quinoa is cooling, prep vegetables:
    • dice cucumber, onion, and red pepper
    • cut olives and grape tomatoes into halves


  • Once quinoa has cooled, add vegetables, squeeze in lemon juice and mix
  • Drizzle olive oil over quinoa and vegetable mix
  • Add in cheese along with salt and pepper to taste

There you have it!  This recipe makes about 6 1/2 cups.
